Although it is an oily fish, garfish differs from sardines in several ways, including its powerful flavour and firm texture. Small fish caught in Galician estuaries are selected within sustainability limits. Once cleaned and toasted, each fish is packed by hand, piece by piece, before olive oil is added. Over time, the oil develops even greater flavour from the fish.
